Domaine William Fevre是Chablis其中一家非常重要的酒莊,所擁有的Grand Cru(特級園),在區內數一數二。1959 年標誌著 William Fèvre 的第一次收成,此後一直由家族經營,直至1998年由Henriot 集團收購。
Didier Séguier作為首席釀酒師,之前曾於 Bouchard Père & Fils 擔任副手,累積了豐富的經驗,把當時非常橡木風格的Chablis,扭轉為更着重風土。簡單來說,出品更富有Chablis的地方色彩。
Premier cru Montmains 位於Serein 河左岸。Montmains是指低於旁邊兩座山的中型山峰。非常多石、風土獨特,出產的葡萄酒具有鮮明的礦物香氣、力量和出色的陳年潛力。

釀造:
人手採收果汁輕柔沉降,保留足夠的酒糟,讓酒精及乳酸發酵自然發生。陳年13 至 14 個月,其中 5 至 6 個月在法國橡木桶浸渣陳年,然後轉移到小型不銹鋼缸內陳釀。

品酒筆記:
酒體有良好的結構,活潑、礦物味十足,回味悠長。簡單、新鮮,濃度集中。

食物配搭:
雞油菌意大利飯。魚類、貝殼類或白肉,燒烤或以忌廉汁煮皆可。


The Domaine William Fèvre, the largest owner of Grands Crus in Chablis.  1959 marked the first harvest of William Fèvre, owner of the domain of the same name until 1998 as it was acquired by Henriot group.
Head winemaker of Domaine William Fevre, Didier Séguier, worked as assistant winemaker at Bouchard Père & Fils, so he already had experience under his belt, steering what was then a very oaky style of Chablis to one that was much more terroir driven and for want of a better word, just more "Chablis."
Premier cru Montmain locates on the left bank of the Serein. Montmains means the medium-sized mountain that is lower than two surrounding peaks. It has a unique terroir of very stony terrain,  where produces a wine with very pronounced mineral aromas, extraordinary power and excellent ageing potential.

Vinification:
Manual harvest. Very light static settling of the juice to preserve enough fine lees so that the alcoholic and malolactic fermentations can occur naturally.  Maturation for 13 to 14 months, of which 5 to 6 months on fine lees in French oak barrels. The end of maturation occurs in small stainless steel vats.

Tasting Notes:
A structured, lively and mineral wine with good length on the palate. Both straightforward and fresh, with exemplary concentration.

Food Pairing:
Chanterelles risotto. Fish, shellfish and white meat, grilled or in a cream sauce.
