釀酒家族Carilles紮根於波爾多經已5代之久。Château Haut Cardinal由才華洋溢的Philippe Carrille掌舵，家族旗下的酒莊還包括Chateau Robin des Moines 及 Chateau Poupille in Cotes de Castillon。
Haut-Cardinal的葡萄園位於Saint-Emilion向北的高地，園內是70年老藤，已獲取有機證明。土壤以石灰岩混合粘土，這種風土向來以出產優質葡萄酒聞名。

The family Carilles have been established in the Bordeaux vineyards for five generations. Château Haut Cardinal is owned by Philippe Carrille, the talented winemaker, who also manage Château Robin des Moines and Chateau Poupille in Cotes de Castillon.
The 1.5Ha small vineyard of Haut-Cardinal is located on the highest plateau (north exposure) of Saint-Emilion. Planted with 70-year-old vines and certified organic. The Terroir of argilo-calcaire (mixture of limestone and clay) is known for its great refined wine.

Vinification:
Merlot from 70-year-old vines. Hand harvest, fermentation with natural yeast. The aging process takes place in oak barrels with 70% new.
This wine is aged 60 months in barrels followed by 2 years in vats then 24 months in barrels, to finish aging in vats for a total of 10 years aging before bottling. This wine is unique in Bordeaux.
Tasting notes:
Aromas of raspberry, blackberry and cedar. Full bodied, silky tannin. It is elegant, concentrated, complex and nicely balanced.
