余市蒸餾所是生產商Nikka的首家蒸餾廠，建於1934年。有「日本威士忌之父」之稱的竹鶴政孝，在蘇格蘭花了許多年學習蒸餾技術。回到日本後，因為北海道的氣候與蘇格蘭相似，他決定在北海道設立蒸餾所。
余市的威士忌味道濃郁，帶有精緻的泥炭味，以及石炭直火蒸餾帶來的煙燻味。熟成時來自石狩灣的海風，為威士忌賦予一絲鹹感。
2015年Nikka宣佈余市10年停產，直至2022年才復產。年產量僅限9,000支，非常稀罕。

Yoichi Distillery, Nikka's first distillery, built in 1934. The founder Masataka Taketsuru chose the town of Yoichi in Hokkaido because of the similar environmental conditions to Scotland, where he learned whisky-making.
Yoichi malts are described as bold and strong with refined peaty notes and smokiness brought by the traditional direct coal-fired distillation. Sea breeze from the Ishikari Bay delivers a briny hint to the whisky during maturation.
In 2022 Nikka Yoichi 10 Years was re-released after being discontinued since 2015. Limited production, only 9000 bottles per year.
